About this bottle

Sotol — one of the lesser known Mexican distillates such as mezcal— follows tradition and hails from the northern part of Mexico. The Coyote series highlights wild, organic sotol plants (aka Dasylirion wheeleri or desert spoon) and the hearts of the plant are treated with the utmost care being baked in an autoclave as opposed to smoked to keep the plant’s refined character. Because the climate is practically a desert, the plant concentrates sugars making a drink with an impression of sweetness. This is an unaged example highlighting the purity of the process.

First ever sotol. It kiiiiinda reminds me of a sweeter, smoother, mezcal, but without the agave notes, with a much thicker mouth feel, and an herbal dimension that im struggling to pin down. Pretty cool! And a nice sipper.
