The brainchild of Gunnar Gíslason, chef and owner of Michelin-starred Dill Restaurant in Reykjavik, and Jonas Andersen, Beverage Manager for MeyersUSA, Svöl Aquavit is made at New York Distilling Co. in Brooklyn, NY. It launched in 2019 with two expressions. The Danish-Style Aquavit is made by infusing six botanicals, including caraway, gooseberry and rose hip, in a neutral spirit made from rye, corn and barley.
