A limited edition release of only 400 bottles, this mezcal is a vegan version of a pechuga mezcal. Skipping the raw chicken breast, this mezcal instead features organic heirloom apples indigenous to Oaxaca. This is added to the still prior to the second distillation.

Nose: the apple really comes through here! Bright, fruity, smoky. Palate: nice robust vegetal agave, lightly tart, robust yet gentle smoke. Mid palate is appley and fruity. Getting a bit of apple peel here too. A bit of minerality and a touch of plasticine/Play-Doh. Finish: surprisingly long for a clear spirit! Acrid smoke.
Taste of alcohol is overpowering. Expected smokiness, with complexity and additional notes lacking.
