Smooth and mostly mild. A hint of prickling. It's kind of generically bitter with some richness of umami but minimal complexity. Kind of vegetal and earthy. A little sweetness and smoke and iodine of course. Not that great.

Wild growing tepeztate maguey takes 25 to 30 years before they are ready to be harvested. At the distillery in Oaxaca, Maestro Beto distills its pressed juices three times before it is bottled at 45% ABV. Production is extremely limited, with only 480 bottled produced.
