With Pit Viper on the label and a psychedelic stopper, knew I was in a ride with this one. Bit of a muted nose, but some interestingly buttery char alongside that grassy Whistlepig giveaway. Soft butter and toasted marshmallow on the first sip with a spicy kick. Smooth opening that gives way to some burn. Touch of water in there drowns the first-hit-fun but also limits that punch. I’d stick with straight and enjoy this for what it is. Experimental sun barrels charred up to offer something just the right amount of off the wall.
About this bottle
Launched on the first day of summer 2023, Whistlepig Summerstock Whiskey is a limited edition bottling made from a blend of rye and wheat whiskeys. Notably, the whiskey is finished in an experimental "solara" —a reimagination of the traditional solera method using varying levels of toasted barrels including ones which are literally toasted by the sun. Bottled at 86 proof, Summerstock Whiskey will be available across the US in summer 2023. (SRP $72.99)

A light floral, woodsy, honey nose with a pepper-and-hay hit that does a good job smelling like summer. Taste delivers on the aroma with smooth wildflower honey and mild oak and subtle spiciness with a hint of fruit as the sip lingers. The wheat gives everything a mellow softness. Sourcing and stigma aside, I’m tempted to call this the true and better Tennessee Honey.
Nose is honey, grain, perfume. Body is oat, wood, licorice. Finish is paper, cinnamon, bit of coffee. These are not the flavors I look for. The grain and oat notes hit as youth, and there’s nothing overly welcoming on the finish to make up for it.
This is a good blend. Non-premium wheat whiskies tend to be a bit flat for me, but the rye pumps up the volume & gives it a nice dimension. It drinks a bit higher than 86 proof, so don’t let the proof discourarge you from trying.
Heavy heavy caramel butterscotch aroma and flavor. Sweetness hits up front but then just gives way to acetone burn. Not balanced, not even an enjoyable burn. Syrupy and chemically. Not impressed.
This makes for a great base for a cocktail with just the right amount of sweetness and a soft finish. A smooth blend but definitely not your go-to sipper.
