The nose is inviting and full of caramel, vanilla, and honey notes mixed with a ton of rye spice and oak. I also pick up a wee bit of brine and smoke. On the palate, the spices are muted but remain present, and a sensation of sweetness hits and sticks to the teeth with a salivating sensation created on the palate. Further swishes bring out Bartlett pear, apricot, and unripen mango. The finish is medium and continues to create the mouth to water. This is a very good bourbon and worthy of a place on your bar. Very smooth. Nose 4.25/5; Taste 4.25/5 Finish 4.25/5 Overall 4.25/5 Repurchase: Yes Type: at $70 a Friday night pour, this should be $50 and at that price would be a Daily Drinker
About this bottle
Created in 1872 by Taylor & WIlliams and named in honor of the national park, the Yellowstone brand has moved around from distillery to distillery since its creation. The current owner, Luxco, sources the bourbon from other distilleries in Kentucky; however, Luxco recently took a 50% stake in the Limestone Branch Distillery, run by Steve and Paul Beam. In February 2015, the Beams put the first batch of their new bourbon in casks, which they plan to release under the Yellowstone label. The Select is a selection of casks chosen by Steve Beam to reflect the heritage of the Yellowstone name, made from four- and seven-year-old, high-rye bourbons.

Flaviar advent calendar day #20 Nose: cherry, sweet fruity aroma, some toasty oak spice, some mild caramel and cinnamon. Slight orange zest. A light smoke Palate: caramel, toffee. A little bit of hazelnut. This is a rich bourbon. A bit bready. Slight hint of citrus zest. Spicy wood. Definitely getting both corn and rye grain Finish: chocolate starts it very briefly, then fades off into a mildly spicy and warm oak tannic note. After a few minutes of finishing the last sip, and having water, there's a significant eucalyptus/herbal note lingering on the tongue.
Apples and cherries on the nose, like smelling a mulled fruit punch. Theres vanilla, ginger, and toffee wafting up from the glass. Cinnamon and and spice hit first on the palate then turns to fruit. The finish hits hard — a sudden rush of chilies and black pepper overwhelm at first, then give away to mint and sun tea. This one will need some water, I think. With some water, the nose brings some molasses to accompany the cherries and apples. The palate is sweeter. The finish, less spicy and mellow. A tasty bourbon with some depth and nuances to explore. Yum!
My first taste of Yellowstone was years ago with friends. A good bottle with good company is the best combination. Going back to it I still appreciate the flavor profile. Scents of rich caramel, orange zest and baked brioche. The taste gives off a candied baked food vibe. Taste of red fruit and spicy Rye with a warm lengthy finish. This is a bottle to enjoy with company or over the holidays with family.
A rich amber, goldish color. The color is becoming of the brand name. The scent of caramel, corn, flat peppercorn, sweetness,. Cloudy taste of smoke, cinnamon, heat, dry clove, and chalk. The sweetness doesn't come through a lot in the taste as it does in the smell. The alcohol is medium strength but briefly fades away. A bit oily and coating finish. Solid bourbon but needs some refining.
The Nose brings wiffs of Sweet Coconut Vanilla, with a hint of leather. Upon the first sip, the coconut transcends over the vanilla but yet the sweetness remains with a hint of burnt caramel transitioning to the finish. Upon the initial burnt caramel beginning finish, a short burst of spicy mint rounds out the glass and gives the perfect balance of sweet and spicy.
