Cognac, a region filled with venerable old estates, is not the first place that one thinks about when it comes to innovation. Disproving the bias, here is Bache-Gabrielsen’s Cognac finished for at least 6 months in first-fill Tennessee oak barrels. The original brandy was mostly sourced from the Fins Bois region and made of exclusively the ugni blanc grape (typical in the region.)
