Noé Santiago Soares was born in 1939 on the Águas Belas farm, at the foot of the Serra dos Bois, in the rural area of Salinas, a city in the state of Minas Gerais that is traditionally known for producing cachaça. While still young, he became a distiller, following his uncle Anísio Santiago, producing the famous Cachaça Havana and learning the secret of good cachaça from the master distiller. In 1988, he launched his own brand, Cachaça Canarinha, on the market. It was an immediate success and, to this day, is still considered one of the most important beverages. Noé passed away in 2008, at the age of 69, leaving his legacy to his family. Cachaça Canarinha 600ml is aged for three years in balsam barrels before being bottled in traditional beer bottles. Robust, the drink has an alcohol content of 44%. It is considered one of the best distilled Cachaças in Minas Gerais. The origin and surname of the producer are fine credentials. It is made by Noé Santiago Soares, nephew of Anísio Santiago, producer of the famous Cachaça Havana, from whom he inherited the wisdom of producing a quality distillate. It has a yellowish color and a slightly spicy and herbal flavor. The balanced acidity, the fruity flavor and the aroma of fennel and grass make all the difference when tasting it.
