Cranberry, blackberry juice nose. Mike and Ike candies. Blackberry and cherry syrup. Takes a bit for the bade spirit to come through, but it shows in the finish. More of an interesting experience than a standard cachaça to drink.
About this bottle
Novo Fogo cachaça begins with freshly cut, certified-organic, estate-grown sugarcane that is crushed within 24 hours of harvest and immediately fermented for no more than 18 hours. The Tanager (Portuguese for "little bird") is an expression that is aged in two different types of barrels. First, it is aged one year in Four Roses bourbon barrels that have been disassembled, sanded out and lightly re-toasted. Then that distillate is finished for 2 to 3 months in arariba (Brazilian zebra-wood), which imparts its red color.

Apple cider on the nose. On the palate more apple cider, cinnamon stick, red hots. Lingers on the palate. Nice cold weather dram.
smell: red hots, light fruit. taste: cinnamon bark, red hots. finish: no alcohol burn, lingering cinnamon in the throat.
Fun and unique to try on its own but definitely better in cocktails.
My first Cachaca. Tastes like spiced raw honey.
