Tequila Ocho, Single Estate, Corralillos, 2023, Bottle #57,632. 40% ABV. Tasting neat. Crystal clear with good coating legs in the glass. Nose is juicy lime, rain on hot concrete, saline mineral, with herbal roasted agave and light char in the background. Palate is dry, saline, stone mineral, pineapple citrus, honey, sweet grass, and strong white pepper. Oily coating mouthfeel. Finish carries on from there--white pepper and saline, herbal sweetness, and bitter dehydrated lime. Not a long finish, but leaves a mineral aftertaste and mint tingle. An ice cube doesn't alter the basic profile much, but does soften the white pepper and accentuates the floral fruit notes. Subtle flavor profile, spare and clean and soft. It's not a cooked agave or smoke bomb. I'm not a tequila officianado, but I like its spare quality. Not sure how it will stand up to stronger flavors in a cocktail--probably better to sip this--but will try and report later as I think about it.

Tequila Ocho is an additive free, single-estate tequila brand using overripe agaves from its own fields in Los Altos, Jalisco. Made artisanally, the agaves are slow roasted in brick ovens, fermented using natural airborne yeast, and double distilled at low temperatures. Each label will feature the field and year of harvest in addition to the style. Here, the agaves were sourced from Corralillos located just outside of the Highlands at 5,100 feet — the lowest altitude ever used for Ocho.
