About this bottle

The Yellow Rose is surprisingly NOT the state flower of Texas--the bluebonnet holds that honor--but the yellow rose is linked to a folk song written shortly after the Battle of San Jacinto (today's Harris County) which helped to end the Texas Revolution in 1836. This Texan bourbon is produced in Houston's first legal distillery (also located in Harris County) from 100% corn sourced from the Texas panhandle.

Received a sample from a friend. Glass: Glencairn, rested 15 minutes. Color: Medium-dark amber. Nose: Sweet and nutty, almost like a pie. Palate: Oak tannins and more nutty notes. Minimal spice, but some salt. Finish: Short with little heat. Splash: No new flavors are revealed, but the salty note intensifies. Overall: 5/10 - I really wanted to like this more, and the nose gave me hope. The palate is interesting, but not particularly complex, and the finish is disappointing. I can't imagine this would be any good with ice or in a cocktail.

25ml pour neat in a glencairne rested for 5-10 minutes. Nose: come classic bourbon notes, brown sugars, vanilla but more smoke than anything else. Nothing terribly appealing. Palate: oily, smoke and spice. First few sips the spice and smoke overwhelmed my palate, and only near the end of my 25ml pour did I pick up some more classic bourbon flavors hiding underneath. Overall too smoky for my palate. Not going to pour it down the drain, but I doubt I will finish the bottle any time soon.

Pecans, vanilla and a Texas funk. Nose: Pecans and vanilla sweetness, something about this dram just screams Texas. A background oak note, almost like dust or a tornado. Palate: Vanilla sweetness shines through this dram, That pecan nuttiness dances around the vanilla and it's all encased in that warm oak spice. Finish: Medium finish. The oak spice and vanilla sweetness leaves you wanting more.

Sweet corn on the nose. Not nearly as sweet on the palate. The corn and maple flavors hit early but quickly fades and you’re left with the some astringency like wine. Also comparable to a dryness after eating a handful of nuts. Very different than most bourbons I’ve tried. It’s unique but young. I would love to know how it tastes with more time in the barrel.

Nose of corn and minimal wood. Sweet taste from corn. Few other notes in this young whiskey. Definitely not complex or balanced. Finish is short. WIth this quality it should be priced in the $15 to $20 range; others are much better at any higher price point. Debated giving it only 1 star.

Charred Corn husk, and sweet cream corn, no smoke, but some green grass and some brown sugar when it opens up. Not a big fan. Still trying to decide if I like it or not. It is definitely unique for a bourbon. I think it needs other grains snd more aging.
