A very good, intense, Agave Spirit by Atanasio [NOM 1599] in Jalisco (Los Valles), Mexico crafted in stainless steel; 2x distilled before being bottled at 40% abv. It has an aromatic birth with notes of cooked agave, earth, fruits, herbs & spices; while a bold life adds notes of sweet agave, plátanos, green apple, anise, dill & mint; that led to a complex death of medium length with notes of malolactic cheese, pepper, cinnamon, mushroom, grass & wet soil.
