Compared to the pink label Alipus (San Andres) I find this mezcal to be a bit more to my liking. Both spirits exhibit big, bold, and smoky flavors. Neither spirit is going to win any awards for complexity and balance. However, both are solid performers at their price point. I find this expression has a bit more natural sweetness and depth to it. However, there is a very mildly dissonant element that holds it back from greatness. It was also a bit hard for me to mix up anything compelling in a cocktail. So a very good spirit in a general sense but not exceptional as a either a sipper or in cocktails. Overall, this is the kind of mezcal to enjoy around the campfire with friends. And enjoy you will :).

Mezcal Alipús is a line of spirits produced by family-run, artisanal distilleries in the Oaxaca region of Mexico. This particular mezcal is distilled by Don Baltazar Cruz Gomez using agave espadín grown at 4000 feet, in steep and sandy soil. The piñas are roasted in cone-shaped pit ovens dug in the ground called palenques, and the juices are pressed using stone mills. After fermentation with natural yeast in open pine vats, the juice is double-distilled in copper pot stills heated by wood fires. It is bottled unaged.

Beautiful, clean and fresh on the nose Deeply smoky but with strong woody nose. Less charred/tar than bright woody smoke. Bright clean pine flavour on the taste with a backup citrus sweetness. Finish lingers with some small bitterness but doesn’t stay longer than welcome.
Smoke, ash, green herbs, guava, minerals and lime nose. Palate of char and ash, sugar and green pepper. Peppery finish. Less intense but nice balance.
Moderate, minor alcohol after taste, slightly distinct.
