Smell: light agave, salt, some spice?, just tequila smelling honestly Snifter: vegetal taste that kinda leaves an almost woody finish, pepper, agave taste is kinda gone more in the background, some dirt/earthy, On ice: agave begining which mixes with a cinnamon taste and then to the earth notes and then has a vegetal finish. Really wonderful evolution of taste when on ice Verdict: Try It. This isnt tequila, and there is nothing wrong with that, however fans of tequila should most certainly try this cousin of tequila as it still has agave notes, but takes more vegetal and earth flavors that tequila only hints at.
About this bottle
Sotol is not a tequila; it's not even an agave. This spirit is made from an agave-like plant also called a dasylirion wheeler or desert spoon. This is harvested wild and after it is cooked, it is fermented with Champagne yeast. This sotol reposado is aged for six months in new French oak. It is certified organic by the USDA.

Earthy vegital with a Smokey aftertaste. You can close your eyes and imagine sitting outside in the sun smelling the piñas roasting. Very distinctive flavor in a good way
On the nares it’s hard to distinguish from a tequila but I do get notes of brown sugar. To the palate it’s sweet with notes of vanilla & brown sugar
Pretty solid. I think I liked desert door a bit more, but this is still quite good. I'd like to try the anejo version though for a bit more depth.
Gentle smell, pretty good with very little bite
