About this bottle

This is the second batch for Redwood Empire's Grizzly Beast Bottled in Bond Bourbon. Like the previous edition, this is a grain-to-glass offering from the California distillery which is blended from bourbon distilled in spring 2017 using different mash bills. Ultimately, the final blend works out to a mash bill of 66% corn, 23% rye, 7% wheat, and 4% malted barley which differs from the previous release. It was aged for 5 years in 53-gallon American oak, primarily toasted and charred to level 3. Released September 2022. (SRP $89.99)

Real sticky, the legs come slowly and it really hangs a sheet in the glass... Its a bright golden brass in color. Nose is caramel, toast, a very distinct fruity character, or herbal, or something. It's really interesting. Soft on the palate, it starts warming quickly, and the warmth continues to build. It's initially sweet, but only for a moment. It's well balanced throughout, and retains a character of very ripe stone fruit... Prunes more so than cherries. There's a bit of a chocolate note woven in on the long finish, as well as hints of s'mores or dark chocolate malted milk balls. This is complex, interesting, well-balanced, and delicious. It is nuanced without being subtle... This is really good. It's very different than a classic Kentucky bourbon, and that's not a bad thing!

The nose is cherry and sweet. Not much else is there. The taste is oak forward with a nice rich fruitiness following it. in the following sips the caramel from the corn comes through bright and strong. The mouth feel is really good, it coats your mouth nicely. There is a very slight sour note in the aftertaste. The finish is shorter than expected but its nice and present. Overall, this is a wonderful drink. I have enjoyed this before and definitely a good bottle that speaks to my palete. Had to find it on one of my trips and I am happy with the choice.

Had been hoping to find this bottle for a while. Tracked it down in Colorado and as a fan of BiB bourbons and Redwood Empire, my hopes were high. Savory sawdust vanilla nose, right in my wheelhouse, with summery peach and pear. Summer fruit persists on the tongue with caramel, cherry frosting, oak and a hint of pepper. Savory spearmint finish. Still feel like i’m teasing it out, which is what keeps me coming back to the Redwood bottles.

Very sweet smell. Vanilla prominent with some carmel. Or a sweet cotton candy. Sweet on the palate too with a toach of oak. Kind of get an initial hit then it finishes super smooth with decent viscosity. The sweetness lingers in a good way. Very good BIB.

Great nose and everything comes through on the palate. A little maple syrup at first then some cinnamon red hot finish. Very good and flavorful for BiB. This was actually batch 3 but it was not available to rate.
